Honey and Garlic Salmon

Hello Dear Reader,


I love salmon, just adore it, I buy ours, frozen, from Aldi, as the price is hard to beat and I have been very happy with the quality. You get 7 fairly equal pieces of Atlantic salmon, individually shrink wrapped, so it is very convenient to take out as many as you need. I always seem to cook just 6 when really I should just cook the whole 7, rather than having 1 lonely little Salmon fillet left in the freezer.  I must do that next time. Gosh I waffle, don't I? Anyway, I had been wanting to try and replicate a recipe we had while in Alaska last year and this past week I did just that and made my version of Honey and Garlic Salmon.

I tell you this is a fabulous recipe, and easy, it only has 5 ingredients, including the Salmon (well 7 actually if you include 1 finely sliced spring onion and a scattering of sesame seeds) takes hardly any time to cook and is family friendly, thanks to honey and garlic, which I think is the perfect partnership, it makes this dish sweet and super delicious.

Ingredients for Honey and Garlic Salmon, clockwise from the top, 6 fillets of Salmon, skinned, dried with paper towel and both sided seasoned with salt and pepper,  3/4 cup of honey, 1/3 cup of light soy sauce, 3 cloves of garlic, grated on a microplane and 2 tablespoons of apple cider vinegar plus 1 spring onion finely sliced and sesame seeds to garnish (not pictured) 

In a medium bowl mix together the honey, soy sauce, apple cider vinegar and grated garlic and put aside until needed

In a large, heavy based, non stick fry pan, heat a little oil on medium heat, add the Salmon fillets and cook on the first side for 3 minutes

Flip and cook on the second side for 2 minutes

Then add the sauce, turn heat up to medium high and let cook for a further 1 minute

Remove the cooked Salmon fillets and place on a serving platter and cover with foil to keep warm. Bring the sauce to a gently simmer and let reduce for 1 to 2 minutes until syrupy 

Spoon the delectable sauce over the cooked Salmon fillets and finish with the finely sliced spring onion and sesame seeds. Serve the extra sauce at the table for family to help themselves to as little or as much as they like

I served ours with steamed broccolini but next time I will serve it with steamed rice or Quinoa as well, to absorb all that wonderful sauce
