Crunchy golden morsels of deliciousness
I adore hot, salty, crunchy, chips, especially when served with fish, but I don't have them very often as they are a bit of a faff and really, at the moment, my hips don't need any more encouragement. So I did the next best thing, these wonderful hot, salty, crunchy, Spicy, Sweet Potato Chips. They are oven baked and there is not a faff to be seen, simply peel, chop and season then massage with oil, lay in a single layer on a couple of lined trays and bake, turning over at about half time to make sure all sides get some golden love from the oven.Make them today-
Ingredients for Spicy Sweet Potato Chips, clockwise from top left-salt and pepper to taste, 1 tablespoon cornflour, 1/2 teaspoon chilli flakes (or to taste), 1 teaspoon each dried oregano, smoky paprika and ground cumin and 1 kg of sweet potato, cut into "shoestring" chips
Add the sliced sweet potato chips to a bowl, sprinkle over spices and cornflour, drizzle over 2 tablespoons of oil of choice and massage well to cover each chip in the flavoured oil
Spread in a single layer on 2 lined baking trays and roast in the middle two oven racks at 220 C for 20 to 30 minutes, once lovely and golden on one side, take out of oven and flip the chips over. Pop the trays back in the oven for another 10 to 15 minutes, but this time swap trays around in the oven, meaning the tray that was on the lower rack will now be on the upper rack. This will ensure an even result. As always please keep an eye on the trays as every oven is different.
Golden and gorgeous, don't be deterred by the dark bits, that is where all the lovely caramelised flavour is.
I served ours with pan fried fish and mushy peas, just heavenly.
A dipping sauce made with sour cream and sweet chilli sauce would also be divine with these golden, crunchy morsels.
