Cafe Style Banana Bread

Hello Dear Reader,


When we go away camping, our son looks after the house, the dogs and our cat, Ninja, as well as working in his own business. I usually make at least one meal in advance, some to take with us and the rest to leave for him for a meal or two. This time I made this stroganoff which he was grateful for, and then he did his own thing, dinner wise. I had bought a nice hand of bananas, as he usually has one for a quick breakfast and I had also bought 2 containers of sour cream, one for us and one to leave at home for the stroganoff.

When we arrived home from camping on Saturday, I found most of the bananas still sitting, a little worse for wear, in the fruit bowl and a good 3/4 of the container of sour cream still in the fridge. So I got those two ingredients together and made this wonderfully simple and delicious loaf. All you need is a bowl, a whisk and a spatula, simple, easy and hardly any washing up!

I love the texture of this loaf, gorgeous as is, but, it is almost better toasted with lashings of butter, a real cafe style toasted banana bread.

Ingredients for Banana and Sour Cream Bread, clockwise from top left-
3 small or approximately 220 grams bananas, mashed with a fork, 1 1/2 cups of plain flour, 1 teaspoons bicarb soda, 1/2 teaspoon salt, 1 teaspoon vanilla essence, 1/2 cup brown sugar, 1/2 cup light sour cream, 2 eggs and 1/2 cup oil (I use Rice Bran oil) 

Grease and line a 12 cm x 24 cm x 5 cm loaf tin and preheat the oven 175 C.
In a large bowl, whisk together the oil and brown sugar

Add the mashed banana, sour light cream, eggs and vanilla essence

And whisk to combine

Mix together the flour, bicarb soda and salt and then add flour mixture to the banana sour cream mixture

And, using a light hand, gently mix the two together with a soft, flexible spatula until just combined, don't over mix

Pour and scrape mixture into a greased and lined loaf tin and bake for 45 to 50 minutes in a preheated  oven. As always, all ovens are different so please keep an eye on the loaf, start testing with a toothpick for doneness at 45 minutes

I love baking, but I am definitely not an expert by any means, I don't decorate cakes or fuss with icing, give me simple, straight forward, cake recipes any day. That is probably why I love this one so much, no fuss, no bother, just a delicious outcome.
