Easy Asian Chicken Stir Fry

Hello Dear Reader,

This is another really easy Asian influenced recipe, that has wonderful flavour and takes very little time to put together, in fact, in the time it takes to cook some rice, this dinner will be on the table. There is very little in the way of slicing and dicing also, just the red onion, spring onion, red capsicum and the grating of the garlic, so again very little time involved.

It is quite similar to this chicken and this beef recipe, both in ingredients and method, so I suppose it is a combination of both. It is quite punchy in terms of flavour, which I absolutely adore, if you want it less so, reduce the lime to 1 and reduce the fish sauce to 3 tablespoons instead of 4, making it less salty and with a less citrus tang.

Ingredients for Easy Asian Chicken Stir Fry, clockwise from top left-1 kg of lean chicken mince, 375 gram bean sprouts, 1 small red onion, finely sliced, 1/2 red capsicum, diced, 1/2 cup sweet chilli sauce, 2 tablespoons of brown sugar, 2 teaspoons of corn flour, 2 garlic cloves, grated on a microplane, 4 spring onions, finely chopped, juice of 2 limes (the other one didn't make it in the photo) and 4 tablespoons of fish sauce, 

In a jug, add the chilli sauce, fish sauce, grated garlic, brown sugar and juice of limes, mix well to combine

Then whisk in the cornflour, making sure there are no lumps, put aside until needed

In a large, non stick, heavy based, fry pan, add the sliced onion, white of spring onion and diced red capsicum, stir fry for a minute or two

Push the stir fried veggies to one side of the pan, add the chicken mince and saute until cooked through, breaking up any lumps as you go, once cooked, incorporate cooked mince and stir fried veggies

Now add sauce to pan

Bring to a gentle boil, and let cook out for 10 minutes to reduce and thicken

Just before ready to serve, add the crunchy bean sprouts

And gently mix through

Serve with steamed rice and Asian Greens

Easy, quick and delicious, maybe that is what I should call this blog, because all my recipes seem to follow this similar style!
