Oven Baked Pita Crisps

This, of course, is not a new idea, but one that I seem to do quite a bit. As you know by now, I hate waste of any sort and do my utmost to prevent wasted food in my home. I buy the Aldi brand of wholemeal Pita Breads (Lebanese Bread) to use as wraps, you know, like they wrap a falafel or kebab, well I do that to almost any sandwich filling. I find as they get close to their use by date, they get a little dry and start to crack, it's at this stage that I turn them into Pita Crisps.

-I simply cut them in half, so you now have two semi-circles, then cut each half into quarters, then each quarter into thirds, ending up with 12 wedges from each pita bread. I use a pair of kitchen scissors to do this. Then line a baking tray with baking paper

-I then spray each side of the pita bread wedges with cooking spray (Rice Bran Cooking Spray) and grind or sprinkle over any seasoning you have on hand. I use this quite a bit, but good old salt and pepper is more than fine.


-You then bake them in a preheated 150 C oven for 15 minutes, turning them over half way through


They are super crunchy and so morrish, great by themselves or with a dip, like this hummus or this baked ricotta
