This past summer has seen me make lots of new salads, previous to this, I had one, go to, tossed salad, one potato salad and one broccoli salad, all of which I have written about previously (they are all posted under the salad label) so when I read about this take on a potato salad, I thought, hey that's a wonderful idea, a warm potato salad!
It is truly the most delicious potato salad, with a gorgeously golden lemon dressing that soaks beautifully into the warm fluffy chunks of potato. There is only a few other ingredients so it comes together very easily, it is simple, delicious and divine to eat.
Ingredients for Warm Potato, Lemon and Parsley Salad, clockwise from top-
1 kg of potato, skin left on and cut into chunky cubes, salt and pepper to taste, 4 spring onions, chopped, 60 ml of olive oil, a good handful of parsley, roughly chopped, the zest and juice of 1 lemon and 2 tablespoons of Dijon mustard

In a lidded jar, combine the olive oil, lemon juice and zest and Dijon mustard, shake well and put aside until needed
Bring the potato cubes to a gently boil, turn heat down and cook until just soft, don't over cook them, you want them to hold their shape
Once just cooked, drain potato cubes well and then return them to the saucepan on low heat to dry out a little more, then turn them out into your serving dish. While the cooked potato cubes are still hot, pour over about 3/4 of the lemony dressing
Gently mixing with a soft silicon spatula, making sure every bit of soft potato is smothered in the lemony dressing, let sit to cool slightly and absorb the dressing
Scatter over spring onions and parsley and again gently toss to combine
Serve immediately
Another winner of a salad, perfect for any time of year, it is the beautiful combination of intense lemon and just soft enough potatoes, that makes it a winner for me. We served it with pan fried fish and Upmarket Mushy Pea, a perfect combination in my eyes.
