This weeks groceries was all about camping food, some convenience foods that make your life a bit easier when your in the middle of nowhere. Well, that is probably a bit of an exaggeration, we are only an hour and a half drive from home, the little township of Tewantin in just 15 minutes down the road and over the river (car barge over the river), Rainbow Beach is about and hour and a half drive along the beach and the camp ground where we stay has a little shop. But all of these convenient close by places, come at a cost, in either time or money. Time to drive to or extra cost just because there isn't a big shop close by and they can charge what they like.
So, we come prepared and double check we have bought everything we need for the week "In the middle of nowhere". I have to say it is my most favourite kind of holiday, you completely and utterly relax, where you only listen to tides, do as much or as little as you like, eat more simply and the everyday stuff is left behind.
We have made a decision this last camping trip though, we will never, ever again camp in Summer, this last week has been hot as hell, with little breeze some days. I ended up very sick last Saturday from setting up camp in the blistering heat, I had a shocking headache that just wouldn't let up, it took me until Monday evening to feel better. I think lovely hubby now understands how much hard work it is for me to set up this big camp, either I am getting older or less resilient, but it is probably both!

Saturday-Creamy Salmon and Tomato Pasta, using the left over lasagna sheets cut into strips
Sunday and Monday-Super Simple, Throw it all in, Slow Cooker Beef Stroganoff with egg noodles and broccoli, such a delight to have a ready made and delicious dinner
Tuesday-Bacon and Egg Toastie with a bowl of salad on the side
Wednesday-Rissoles, steamed potato with sour cream and tomato and crumbled feta
Thursday-A very rustic omelette of sauteed mushrooms, tomatoes and cheese and buttered toast, a bit messy and a lot delicious
Friday-Baked Beans with grated cheese on toast, simple and delicious
