Lemony Lentil Salad

Hello Dear Reader,

Sometimes a salad needs just a bit more "body" to make it filling enough, do you know what I mean? Don't get me wrong I love lettuce and cucumber, in fact I adore all the usual salad ingredients but I feel a tossed salad lacks something that will stick to your ribs. Solution? Add some lentils.

The addition of these, just soft enough lentils, add that"body" and wonderful texture to this lovely lemony salad. I have really spread my wings as far as salads go, this past summer, and they have all been keepers. I could happily just have this for a light lunch or dinner as it has enough protein to keep you satisfied and the flavours work so well together.

Ingredients for Lemony Lentil Salad, clockwise from centre top-
1 can of drained and rinsed brown lentils or 1 cup of dried brown lentils cooked in the usual way, a couple of big handfuls of rocket leaves, washed and spun out, a really good handful each of parsley and coriander, finely chopped, 1 red onion, finely chopped 250 grams of little tomatoes, quartered, 1 packet of feta, cut into small cubes and 2 Lebanese cucumbers, finely diced

Ingredients for the dressing-a good grind of salt and pepper, 1 tablespoon of honey, 1/3 cup of olive oil, zest and juice of one lemon, 1 garlic clove, grated on a microplane and 1 teaspoon of Dijon mustard (not pictured) 

Add all dressing ingredients to a jar with a tight fitting lid and give it a really good shake, set aside until needed

Add all salad ingredients to your biggest bowl

Pour over 3/4 of the gorgeous lemony dressing 

And gently toss to combine, making sure everything gets a good soak in the dressing

Pile onto a big serving platter

Serve the rest of the dressing at the table for everyone to help themselves to more of this luscious, zesty dressing. This is definitely a case where more is better.
