How to Slice or Dice a Capsicum the No Waste Way

Years ago, 6, actually, I completed a "Chefs Skills" course taught by the wonderful Melanie Townsend of Vanilla Zulu, it was fabulous, we met for one night a week for 6 weeks, covering basic chefs skills, everything from baking bread to making Chicken Liver Pate and heaps in between. I still have the outline for the course and all the recipes we made.





So, as a small part of this course we were taught knife skills and how to prepare vegetables, making sure there was very little or no waste and I still use these skills today. I love the way I chop an onion  and love, love, love the way I chop a capsicum. Small things!







So this is how I prepare a Capsicum

No matter what the shape of your Capsicum, slice off the top and bottom

Slice down only one side of your whole Capsicum and gently start to unfold it and flatten it 

Remove the seeds and any white part of the top the of the capsicum, it should come away in one piece

Slice the Capsicum into 3 or 4 sections, cut where it naturally curves

Now, with a sharp knife remove the white membrane, then line up sections in a straight line 

Slice into batons, if you need diced Capsicum, simply slice the other way while they are all lined up

Then slice the top and bottom parts of Capsicum you chopped off in the beginning into similar sizes, gotta love no waste.
