I have done step by step instructions and photos, using my Thermomix
Ingredients for Chads Bread with a Twist, clockwise from bottom left-160 gram Rye flour, 350 gram white bread flour, 30 gram oil (I use Rice Bran Oil), 2 teaspoons instant yeast, 310 gram water and 1 teaspoon each of brown sugar and salt
Weight out water=310 grams
Heat for 2 minutes at 37 degrees
Place all other ingredients into the bowl in this order-yeast, sugar, salt, oil and finally flour's
Mix for 10 seconds on speed 6 until just combined
Remove lid and give it a good scrape down
Knead dough for 6 minutes or if doing by hand-12 minutes
The dough will come away clean from the bowl when done
Put dough into a large bowl that you have sprayed with oil (I use Rice Bran Oil spray)
Let prove for 1 to 2 hours, I left mine for 2 hours as the Rye flour need a little more time
Turn out onto a floured bench/board
And flatten and stretch into a long rectangle
Roll up from the short end to form an oval loaf (or really any shape you like)
Brush with water and sprinkle over Caraway seeds
Slash with panache
And let rise again for 1 hour
Bake in a preheated 200C oven for 30 minutes or until golden brown and sounds hollow when you tap it
Devour with a slathering of butter, so good.
You could, of course just make it with white flour but as I said, I love any chance to get more fibre into my body, and the Rye flour adds an interesting flavour and texture. I used Caraway seeds as Rye and Caraway are best buds but again you could use any seed you like or indeed leave it bare.
