Fluffy, Overnight, Almost-Sourdough Pancakes

Hello Dear Reader,


I found the inspiration for this little recipe from Mel over at Mels Kitchen Cafe and thought I would give it a whirl. I wanted to use up some whey I had left over in the freezer from making Greek yoghurt a while a go, so I substituted the whey for the buttermilk in the original recipe and mixed it with some greek yoghurt I had lurking in the fridge. The result is the lightest fluffiest pancakes you will ever make.

This recipe uses a small amount of instant yeast to give it bounce and in my mind the technique is very similar to "5 Minute Sourdough Bread" that I have made countless times over the years. You simply mix all ingredients together, cover it and leave it to rest for a few hours or, in this case, overnight, then in the morning simply spend some time at your stove spooning and flipping the gorgeous light and airy sourdough pancakes.

Because of the combination of greek yoghurt and fermentation, there is a definite hint of sourness to the pancakes which is beautifully balanced with maple syrup and fruit when serving.

Make them, love them, try to stop eating them slathered with butter and maple syrup.

Ingredients for Fluffy, Overnight, Almost Sourdough Pancakes, clockwise from right-
2 cups plain flour, 2 tablespoons sugar, 1/2 teaspoon of salt, 2 teaspoons of bicarb soda, 2 eggs, 1 tablespoon of instant yeast dissolved in 1/4 cup of tepid water, 1/4 cup neutral oil (I use rice bran oil), 1 cup whey and 1 cup greek yoghurt mixed together (you could easily substitute 1 cup of milk for the whey)

In a large bowl add the flour, sugar, bicarb soda and salt

Whisk to aerate 

To the greek yoghurt and whey mixture add the oil, yeast mixture and eggs

And whisk until light and frothy 

Add the wet ingredients to the dry ingredients and gently mix with a soft flexible spatula, using a light hand, until just combined. Cover and refrigerate overnight

In the morning the pancake mixture will be proofed and bubbly

The mixture is very thick but super light, gently spoon mixture into preheat non stick heavy based frypan brushed with a little butter


And flip when bubbles start to appear on the surface

I love pancakes, there is something so comforting and homely about them, simple, delicious and satisfyingly filling. I now have quite a few pancake recipes in my repertoire and love them all, from the simple Super Quick 3 ingredient Banana Pancakes to the slightly more complex Gluten Free, Light and Fluffy Pancakes, that I seem to make almost weekly.
