Creamy Chicken and Broccoli Pasta Bake

Hello Dear Reader,

This recipe came about as I had one really big head of broccoli in the fridge and almost 500 grams of chicken thigh fillets in the freezer to use up and I thought I would get those two together. At first I was going to do some kind of cheesy-broccoli-chicken soup, but it still has been so hot so I thought a pasta bake would be more suitable. In saying that I still ended up hot and bothered in the kitchen, while making it, when oh when will Autumn make an appearance?

I made something similar to this for Easter, minus the chicken,  a few years ago, it was so delicious, so I thought some golden chicken would make it even more delicious.

Circa Easter 2016-Cheesy Broccoli Pasta Bake

Like most of my recipes, it is simplicity itself, cook the pasta, chicken and broccoli, separately, make a cheesy white sauce, mix them all together and bake for 10 minutes or so. Easy, quick and delicious.

Ingredients for Creamy Chicken and Broccoli Pasta Bake, clockwise from bottom right-one good sized head of broccoli, cut into smallish flowerettes, cooked for 2 minutes and then put into iced water to stop it cooking, drained well, 1 cup of grated cheese, 40 grams of plain flour, 250 grams of Penne pasta, 40 grams of butter, 1/2 a medium onion, diced, 2 cups of milk, heated in the microwave for 2 minutes, approximately 500 grams of chicken thigh fillets, each fillet cut into 6 pieces, 1 teaspoon of Dijon mustard and some parmesan cheese for grating over before the bake goes in the oven (not pictured)

First cook pasta in the usual way, drain well and set aside until needed

In a non stick, heavy based fry pan, brown and seal the chicken on both sides

Then turn heat to low is let finish cooking through, it is okay if it catches a bit that means more flavour

Meanwhile make a white sauce by melting the butter, sautéing the onion till just starting to turn golden, now add the flour and using a whisk, cook it out for 2 minutes, then whisk in the warm milk. Stir on medium heat till thickened then add in cheese and Dijon and let melt into sauce. Remove from heat

In a big bowl or like I did, the casserole dish you will bake it in, mix all the ingredients together until well combined, grate over some parmesan cheese and bake in a preheated 200 C oven for 10 minutes
