Just a quick little post this morning, but still a really great little recipe. Hands up who loves Asparagus, me, me, me, I do! Love it just simply steamed with a little drizzle of oil and balsamic, love it on retro toasties, hello ham, cheese and asparagus, love it stir fried with beef, garlic and soy but love it most this way. Simple and green, with a knock-out flavour.
Ingredients for Chargrilled Asparagus with Garlic and Mustard Vinaigrette, clockwise from top right-1 teaspoon oil, 1 teaspoon seeded mustard, 1 teaspoon Dijon mustard, 1 clove garlic, grated on a microplane, 1/4 teaspoon castor sugar and 2 tablespoons white wine vinegar. This is enough for 2 standard bunches of Asparagus. Trim Asparagus as usual, rinse well then drain. 
In a wide mouthed glass jar, combine all ingredients for the dressing and shake well. Set aside until needed
Once fry pan (or actual chargrill pan) is piping hot, brush Asparagus with a little oil and add to the fry pan in a single layer
And chargrill for 2 to 3 minutes a side or until bright green and starting to char and take on some colour
Plate up chargrilled Asparagus and drizzle over Garlic and Mustard Vinaigrette, serve immediately
