I had a little switch-a-roo, meal wise this week, with having left overs from both this week and last week. I L-O-V-E left overs big time. You know that feeling, about 3 O'Clock in the afternoon, when you realise there is left overs for dinner and that smile that comes across your face and that wonderful feeling you experience of not having to cook dinner that night, oh how I love it!
Anyway, that happened twice this week, go me! So we didn't use the 500 grams of beef mince we bought for this week BUT we did use up the Smoked Salmon from Easter week. That left the fridge a little less cluttered by yesterday.
I have to get into the pantry over the weekend and give it a really good tidy up, so don't be surprise if you see a before and an after (like this one) this week some time. I do have a fair idea of what is in there but as Lovely Hubby does the grocery shopping, the grocery photo's and the putting (shoving) away, I sometimes lose track of what we have in there. So a stocktake of the pantry is in order.

Friday-Beans on Toast, easy, delicious and good for you. These are the Heinz Mexican Beans
Saturday-We had some lovely friends over for lunch and we served Retro Tiger Prawns and Seafood Sauce AND
This Frittata plus a beaut salad, we were all so full from this big lunch we just had some leftovers that evening
Sunday and Tuesday-Veggie Shepherds Pie and steamed Broccolini
Wednesday-Prawn Stir Fry, we are having this almost weekly lately. Lovely Hubby and Son caught these prawns, they are medium bay prawns, on the small side but very sweet
Thursday-Smoked Salmon Pasta with Asparagus
