I have had an extra short working week, this past week, thanks to Easter Monday and an ADO on Tuesday, so lucky. How I would love to work part time (or really not at all), home is where I want to be, but for now, working full time is the better financial decision.
I mentioned on Wednesday that I have a lovely holiday planned with my darling sister in about a months time, as always, this holiday was planned and paid for well in advance. Living a small, frugal life the majority of the time while planning and paying for something that really makes your heart sing, for me, is what it is all about. One reader put it this way "I'm not here to work and pay bills" live is meant to be lived.
As most of you know by now, my biggest priority for saving money, is by using the food we buy, week in week out, wisely. I won't let anything go to waste and look after our food purchases to prevent waste. I guess that is why a lot of my"5 frugal things" are about food.
1. Gave some limp lettuce an ice bath to revive it, it was then, good to the last leaf.
2. Made a batch of non crossed, Hot Cross Buns for Easter Sunday, here is the recipe I used. I already had all the ingredients at home so there was no additional outlay.
3. Stretched 250 grams of left over ham to five rounds of Croc Monsieur, the ultimate ham and cheese toastie, for dinner last night, I had baked the ham on Tuesday and cut the sliced ham into batons to make it go further.
4. Made a batch of Raspberry and Yoghurt cupcakes, using this recipe, to take to work for our monthly morning tea, using ingredients already at home. I kinda made a big mistake while making this recipe, I had forgotten to add the yoghurt to the mixture, I was already spooning the mixture into the cupcake wrappers when I realised my mistake. So the mixture was scooped out and remixed with the forgotten yoghurt, by this stage the frozen raspberries had de-frosted, hence the pink cake mixture. Never mind they were still delicious.
5. Packed my lunch for work everyday, todays morning tea and lunch is-
Celery sticks and homemade nut butter
Hummus and tomato sandwich and my little piece of dark chocolate
