When I arrived home after our week away at Bunya Mountains there was a bunch of bananas looking a little worse for wear in the fruit bowl, I used some up for our breakfast fruit salad and 3 went into this great little recipe.
I baked this cake mixture in a little loaf tin, it made two sweet little loaves, but it makes one normal size loaf.
Ingredients for Banana and Raspberry Bread, clockwise from top right-2 tablespoons maple syrup, 2 tablespoons softened butter, 1/2 cup of brown sugar, 1 egg, 3 bananas, mashed, 1 cup frozen raspberries, 1 teaspoon baking powder, 1 1/4 cups of plain flour, 1/4 teaspoon of salt and 1teaspoon vanilla essence
Add the flour to a bowl and whisk in the salt and baking paper, set aside until needed
In the bowl of a stand mixer, add the softened butter and brown sugar, cream for about 10 minutes or until light in colour
Now add the mashed bananas, egg and maple syrup
And mix until combined
Add the plain flour mixture and mix in on low speed
Until just incorporated
Remove mixing bowl from stand mixer
And very gently mix through the frozen raspberries
Until just combined, use a light hand and do not over mix
Pour mixture into prepared tin of choice and bake at 180 C until cooked through
Sweet and delicious
As you can see I haven't given a baking time, because I used the little tins they only took about 20 minutes to bake all the way through, so the cooking time will depend on what size tin you use.
