We use the fruit every day when it's in season with our daily fruit salad and yoghurt breakfast bowls, when there is an abundance I make passionfruit butter, lime and passionfruit butter and pavlova. When there is still too many passionfruit, I freeze the pulp down in batches suitable for the passionfruit butter to make later. This year there were a few stragglers sitting on the vine so I picked the last three and made this fabulous Passionfruit Delicious Pudding.
I found the recipe for it the same day I found this recipe and couldn't wait to try it. Mum used to make a "Lemon Delicious Pudding" and we all loved it, I could just imagine golden fragrant passionfruit used in this way.
Ingredients for Passionfruit Delicious Pudding, clockwise from left-Pulp of 3 large or 6 small passionfruit, 60 grams of butter, softened, 1 1/4 cups of milk, 3/4 cup caster sugar, 1/4 cup plain flour and 2 eggs, separated.
Cream butter and sugar together until light and creamy
Add the egg yolks and the passionfruit pulp and mix to combine
Now add the milk and the flour and again mix until combined.
Transfer this mixture to a large bowl
Wash and dry mixer bowl well then add the egg whites and beat until soft peaks hold their shape
Add about 1/3 of the egg whites and, using a metal spoon, gently but thoroughly mix into the passionfruit mixture.
Continue adding and incorporating a third at a time
Using a light hand
As all the air you mixed into the egg whites are what make this pudding light as air
Pour and scrape into a greased dish, mine is a 20 cm pie dish. Pop dish into a large roasting tray and fill tray with boiling water about half way up side of dish. Bake in a 175C oven for 30 to 35 minutes or until starting to take on a golden colour and is just set. A bit of a wobble is good.
Golden and gorgeous. There is a just set, light as air sponge with a creamy custard underneath. Dust with icing sugar and serve with cream or ice-cream or both. Divine
