Holy cow, you have to make this recipe, it has been on my "recipes waiting to be made" list forever and finally last Sunday was the day to try this simple little recipe. There are very few ingredients and the method is the same as my best Chocolate Brownie recipe. So simple, it's dangerous. From go to whoa it takes about 30 minutes, let it cool for 15 minutes (or not) and in under 45 minutes you have the best, toffee-like, butterscotch-y, unbelievably good Blondie. You-must-make-this!
Ingredients for Blondies with Choc Chips and Walnuts-Clockwise from top left-160 grams butter, melted, 1 teaspoon vanilla essence, 1 cup plain flour, 1/3 cup each of dark and white chocolate chips, 1/2 cup brown sugar, 1/3 cup raw sugar, 1/2 teaspoon salt, 1 egg at room temperature and 1 cup walnuts, chopped
Preheat oven to 175C and grease and line an 8" square baking tin or pyrex dish.
In a large bowl, add the melted butter and sugars and whisk well

Now add the egg and whisk again
Gently fold in the flour using a light hand and a flexible spatula
Then add 1/2 the chocolate chips and 1/2 the walnuts
Again, using a light hand, gently mix. Pour and scrape into a lined 8" square baking tin or pyrex dish (that's what I use)
Then sprinkle over rest of chocolate chips and walnut, pushing them gently into the blondie mixture
Bake in a preheated 175C oven for 22 to 25 minutes, they will continue baking once out of the oven, so it is better for them to be just under than over. As always every oven is different, so start checking for doneness at 22 minutes.
This is a super soft Brownie/Blondie, so rich and divine. Gorgeous warm from the oven with ice-cream or just by themselves with a cuppa. Such a treat.
