Curried Potato and Pea Parcels

This is another recipe inspired by my freezer and pantry challenge, you see in early November I bought a big 2 kg bag of potatoes that had been marked down dramatically, only  $1 for the 2 kg's, that was hot on the heels of buying a large quantity of potatoes for the roast dinner for our daughters birthday in late October. As they weren't all used up, we have ended up with a glut of potatoes, I know there are worse things to have than a glut of potatoes as they do keep for a long time but I wanted to at least put a dent in them.

When I found a small quantity of frozen peas (1 1/4 cups to be exact) in the freezer, my thoughts went straight to something curried with potatoes and peas, then when I found the puff pastry, the deal was sealed, Curried Potato and Pea Parcels it was.

Ingredients for Curried Potato and Pea Parcels, clockwise from top, 1 tablespoon or more to taste of your favourite curry powder, 1 1/4 cups of frozen baby peas, 1 red onion, finely chopped, 2 garlic cloves, grated on a microplane and 750 grams of potatoes

Peel and finely dice the potatoes

Boil the potatoes till just tender, not falling apart, drain well and put back into the saucepan on medium heat to dry off, agitating the saucepan every now and then so the potato doesn't stick

Meanwhile in a large, heavy based, non stick fry pan, add a good slosh of oil and sauté the onion for 5 to 10 minutes on medium low heat, then add the garlic and curry powder and sauté till fragrant  

Add the hot potato to the onion mixture 

And mix well, squishing the potatoes and generally roughing them up

Boil the peas for 1 minute, drain well and add these to the squished potato and onion mixture

Cut a square puff pasty sheet into quarters, fill with curried potato and pea mixture, fold in half diagonally and seal with an egg wash. Use a fork to seal, then brush with more egg wash and sprinkle over nigella seeds (kalonji) or sesame seeds. Bake for 20 minutes at 200C or until puffed and golden brown

This quantity made a truck load, I used 5 sheets of puff pastry, making 20 parcels in total.

They were totally delicious, hot and crispy, straight from the oven served with greek yoghurt and chutney and they were also lovely cold with a salad for lunches during the week.
