We had a casual Friday night family get together last night, I didn't feel like cooking so we pushed the easy button and got take away pizzas. I know, not very frugal but easy and stress free. Sometimes it's just nice not to have to cook, you know!
But apart from this splurge we cooked and ate at home as usual, we had a couple of our favourite meat free dinners rounded out by a couple of cheap and cheerful meat dishes. It always amazes me how far 500 grams of mince goes when you serve it with rice or pasta.
On this occasion we made what we call "Mince and Egg" it is simply 500 grams of lean beef mince with a healthy dose of ABC sauce (Kecap Manis), half a finely diced onion and 2 teaspoons of cornflour. You mix this all together really well and then fry it off, mixing and smooshing the mince as you cook it so be breaks down into fine crumbles. You can then either pour over about 4 beaten eggs and cook till set or as lovely hubby likes to do, once he has served his rice and mince he breaks over an egg and mixes it through, he and our son loves it like this, but we girls do not. This was one of the first dishes I learnt to make from my late MIL and it's still one we enjoy.

The pasta sauce was 1/2 price, so we stocked up. We also bought some frozen green veg for the dogs to make their dinners a bit healthier. I simple steam one cup of the veg in the microwave for 3 minutes then cut up the veg really finely and mix it into the mince and dry dog food. They love it.

Shopping from Aldi. You know, Aldi's berries and avocados are always perfect, good to the last bit.

Friday-Bacon and Mushroom Carbonara, this was a planned meal that was on last weeks menu but wasn't made because of leftovers
Saturday and Sunday-Roast Pumpkin and Chorizo Frittata Slice and steamed Broccolini
Monday-Roast Pumpkin Alfredo with Rosemary and Garlic Focaccia
Tuesday-Mince and Egg steamed basmati rice and Choy Sum
Wednesday-Oven Roasted Spicy Chicken Wings with steamed basmati rice and Pak Choy
