Hello Dear Reader,
This past week has seen me gradually putting up the Christmas tree, I've been doing a little bit each morning before I go to work. This weekend, once the tree is decorated, I will wrap the few presents I have bought and pop them under the tree. I have a couple of extra cards to send out (the others went last week) and I need to send a parcel up to our daughter and partner in Cairns.
Last Sunday we got together with our son, his partner and her Mum and Aunty and sorted out who wants to bring what for Christmas Day. We will be celebrating Christmas next door with our son, his partner and her extended family. It will be a completely different Christmas to our normally little family gathering, with about 20 people expected.
This year all we need to do is roast two rolled legs of lamb (me) 2 rolled shoulders of pork (lovely hubby), bring the mint sauce and mint jelly for the lamb, make
this Sticky Ginger Pudding and make a custard to go with it. We will also be supplying tablecloths, platters, plates, serviettes and cutlery.
As I will be finishing work a little earlier on Christmas Eve we will be able to help set up the tables next door and also help prepare the veg for Christmas Day in the afternoon then we will be having a small get together with my Niece and her little family and our son and partner, keeping it really simple. I have bought three Salmon Wellingtons from Aldi (thanks for the suggestion Jen) and I will probably make a potato salad plus a simple dessert (I haven't decided which one yet) finishing early so everyone can get home and get ready for the big day.

I will be making the same cake as I made for the last few Christmas's it is
Nigellas Easy Chocolate Christmas Cake, I will also make
this Guinness Gingerbread plus quite a few jars of
Lime and Passionfruit Curd (Lime juice and passionfruit pulp from the freezer) to give away as presents. That's the plan anyway. I know life can throw things at you when you least expect it, but having a plan in place is better than winging it, I think, especially at this busy time of year.
