What we bought, spent and ate this week

Hello Dear Reader,

This week has seen a few things used up from the pantry and freezer, I used a left over frozen portion of jerk sauce and roasted another chicken with it, I used up the last of the semolina to make another batch of Baked Semolina Gnocchi, the last can of salmon was used and some tapioca flour was used to make grain free crepes. Not that we need to eat grain free I had just read about it and wanted to give it a go. I have to say the crepes turned out really lovely, light but sturdy and I think they were easier to handle than normal crepes.

I want to make them again before posting the recipe just so I know it wasn't a fluke. I used the last can of salmon we bought from the Golden Circle Factory Outlet and used this recipe for the filling, they turned out to be delicious.

We had a big day last Sunday, we drove up the coast to visit a few friends and family to tie up a few loose ends, we had lunch with lovely hubby's Uncles and their families at the Goomeri Pub. The servings for lunch were huge so we both didn't feel like dinner that night. I had put this slow cooker Beef Stroganoff in the slow cooker before we left in the morning, we had it on Monday and Tuesday night plus I froze some as well.

What we ate

Friday-this was a combination leftover kinda dinner, leftover Spicy Cauliflower Rice with Spicy Lentil and Carrots plus a fried egg and Sriracha 

Saturday-Tapioca Flour Crepes with Zesty Salmon and Herb Filling 

Sunday-we were both still so full from lunch we had smashed avo, feta and red onion on toasted rye sourdough

Monday and Tuesday-Slow Cooker Beef Stroganoff with sautéed Silverbeet and egg noodles

Wednesday-Roast Jerk Chicken with Lovely Quinoa and Chickpea Salad, I used up the last portion of jerk sauce from the freezer

Thursday-Baked Semolina Gnocchi

As you know by now I don't let anything go to waste, we love our leftovers and are either used for lunches or another dinner, I am always mindful of food hygiene and make sure any leftovers are treated well. Food is expensive and time is precious, I will not waste either.
