I've been awake since about 3 am as my brain was swirling with everything I need to get done over the weekend in preparation for Christmas Eve and Christmas Day. It doesn't happen very often, but when it does it is really frustrating. I am already so tired and the day hasn't begun!
So in my sleeplessness this is the plan that my brain came up with-
Make the Dulce de Leche and the biscuit base for the Banoffee today
Cook the Quinoa and roast the sweet potato and almonds for this salad for Monday's dinner
Wrap the few last Christmas gifts (I was waiting for a few things to come in the mail but it looks like they won't arrive in time)
Help move the last two potted fig trees from next door
Two loads of washing
Wash the little woofs
Do a quick vacuum plus de-hair the lounges (one black cat goes a long way)
Take out the frozen leftover beef ragu for an easy dinner tonight
And that should just about do me. How's your day looking?

Friday-Leftover Baked Semolina Gnocchi
Saturday-It was just me for dinner so I made a couple of Smoked Salmon and Egg Bakes and sandwiched them in between a flat bread with sour cream and capers, messy but delicious
Sunday-Left over Beef Stroganoff on toast, from the freezer
Monday-Fish Burgers
Tuesday-Beef Ragu with Olives and Mushrooms
Wednesday-Tempura Whiting with steamed basmati rice and choy sum
Thursday-Baked Cod with Spicy Chorizo Topping, mashed potato and steamed broccolini. This is a new recipe we tried this week, it was so delicious, if you're interested I will post the recipe soon.
And that's exactly what we bought, spent and ate this week, you turn what was on your family table this week.
