Lime, Honey and Garlic, Pan Fried Reef Fish

Hello Dear Reader,


I am married to a fisherman, and my dad was also a fisherman, so I've eaten fresh fish my whole life. We eat fish and other seafood at least twice a week which I am so very grateful for. When Lovely Hubby catches the fish, it is cleaned and frozen in a matter of hours, he cryonics the tray of fish fillets and once de-frosted, they are as good as the day they were caught.

The fish below, which is reef fish, was caught when Lovely Hubby and Son were on their fishing charter up north about 9 months ago. The big fishing charter vessel didn't have a cryovac machine but did seal the trays of fish fillets fairly air tight, so these fillets are also holding up well. They are totally delicious just as they are, simply dredged in flour and pan fried, the fish really doesn't need any help in the flavour department. However, I had seen the idea for this recipe in a magazine at work and thought it would be delicious and I was right.

Ingredients for Lime, Honey and Garlic Pan Fried Reef Fish, clockwise from left-zest and juice of 1 big lime, salt and pepper to taste, 2 tablespoons of honey, 1 tablespoon chilli infused olive oil and 4 fillets of fish 

In a wide, shallow dish, add the juice and zest of the lime, honey, oil and salt and pepper, mix well. Add fish fillets and marinade for up to 1 hour, turning half way through. Drain off excess marinade and dredge fish fillets in plain flour, shake off excess, then pan fry till golden

We use a combination of butter and rice bran oil to pan fry fish, it gives them a lovely golden colour

On the night we had this, I served roasted broccoli and Bacon and Egg Potato Salad as sides.
