So Easy Socca

Hello Dear Reader,

I read about this beaut little recipe over at "A Pinch of Yum" a while ago and thought it sounded really interesting. Socca also known as Farinata is a thin, crisp, light as air, flatbread made with chickpea flour, it is so easy to make and would be such a great accompaniment for so many dishes. Think dipping crispy, puffy, shards into a thick warming soup, a tummy bolstering extra to stretch out a stew or casserole or top with egg and avo for a quick gluten free "bread" for brekky.

The "recipe" itself is so simple using just the chickpea flour, water, salt and oil, yep that's it, don't blink or you'll miss it.

Ingredients for So Easy Socca, from left-1 cup chickpea flour, 3/4 teaspoon salt and 1 1/4 cups of water

In a medium bowl, whisk together the chickpea flour and the salt

Then add the water and whisk till batter is smooth, let sit for a few minutes 

Heat 2 tablespoon of oil in a large, heavy based frypan that is suitable to be put in the oven, in a 235c oven for 5 minutes 

Pour batter into the very hot frypan and put back in the oven for 20 minutes or until golden and burnished in places

Slide Socca out onto a serving board and serve immediately 

The Socca is crispy on the outside and has flaky layers on the inside

I served ours with some left over Apricot Chicken Risotto to pad out the meal, it was divine. Hot, crispy, salty, flaky and soft on the inside. Make it tonight!
