Crazy Easy Carrot Cake with Lemony Cream Cheese, Whipped Cream

Hello Dear Reader,


I read about this recipe over at "At Pinch of Yum" a little while ago and thought how wonderful it looked. I then read the method and had another thought "this would be so easy made in the Thermomix" And it was, like less than 1 minute from go to whoa. I fiddled with the original recipe, totally doing away with the streusel topping, decreasing the sugar and instead making an amazing lemon flavoured cream cheese, whipped cream to go with it.

I am no cake decorator, I don't ice cakes, I either serve them with  heavenly vanilla whipped cream or just dust over icing sugar. You know when you're good at something, right? Well I know that I am not good at cake decorating or icing, and I am okay with that.

This recipe makes quite a small cake, which is lovely, just enough for family or a few friends for morning or afternoon tea. You could ice the cake with the Lemony Cream Cheese, Whipped Cream and make it look really beautiful, it is quite a sturdy "icing" because of the cream cheese. So, either way you serve  it, spooned on the side or ice the whole cake, you simply must make the lemon infused, slightly tangy, whipped cream.

As mentioned above, I have made this cake in my Thermomix, but you could easily make it without one, grating the carrot or blitzing it in a food processor then finishing by hand or again in the food processor.

Ingredients for Crazy Easy Carrot Cake, clockwise from left, 2 medium carrots, peeled and cut into thirds, 1/2 cup of white sugar, 1 cup plain flour, a pinch of salt, 1 teaspoon bicarb soda, 1 teaspoon cinnamon, 2 eggs and 115 grams of butter, melted (not pictured)

Add carrots to the TM bowl and blitz for 3 seconds on speed 5, scrape down sides and repeat

Now add the eggs sugar and the melted butter and mix on speed 3 for 5 seconds



Add the flour, bicarb and cinnamon 

And mix again on speed 3 for 5 seconds

Pour and scape into a 18-20 cm lined cake tin

Bake for 25 to 30 minutes or until golden and cooked through, turn out onto a cooling rack

Lemony Cream Cheese, Whipped Cream

Ingredients for Lemony Cream Cheese, Whipped Cream, clockwise from left-1 cup of thickened cream, 125 grams of cream cheese at room temperature, 1/4 cup of icing sugar and zest of one lemon

Add the icing sugar and lemon zest to the bowl of the TM and blitz on speed 5 for 3 seconds

Add the softened cream cheese and thickened cream and mix for 5 seconds on speed 5

Scrape down sides and repeat 

Serve with cinnamon-y scented, just sweet enough Carrot Cake
