I made this fabulous Frittata for dinner on Saturday night and it is just so delicious and almost a meal in one. Carb, protein, green veg, check, check, check. It is also very easy.
It is made in the Thermomix but could easily be made without. I served this Veggie Loaded Frittata with roasted broccoli and was just lovely warm but I think it was even nicer, cold, the next day, for lunch. It cuts beautifully and would be fabulous for a work or school lunch.
Ingredients for Veggie Loaded Frittata, clockwise from top left-1 kg of mixed veg, chopped into smallish chunks, I used 350 grams each of pumpkin and sweet potato and 250 grams of potato, 10 eggs, 100 grams of cheese, cubed, 1/2 a red onion, 200 grams of Fetta and 100 grams of baby spinach
Add onion to the TM bowl and blitz for 5 seconds speed 5, remove onion to a large bowl. Next add the cheese cubes and blitz for 5 seconds on speed 5, add the cheese to the large bowl and finally add the feta, broken into chunks, and blitz for 3 seconds speed 5
Add the eggs and spinach to the TM bowl
And blitz for 5 seconds speed 5
Pour egg and spinach mixture over cheese and onion mixture
And give it a really good stir, set aside in till needed
Steam veggies for 20 minutes on speed 2, giving the veggies a gentle mix half way through to make sure of even cooking
Once veggies are soft, add it to the egg mixture
Give everything a gentle but thorough mix and pour into a greased casserole dish, mine measures-

Bake for 30 minutes at 200 C or until golden and set
It is a really filling frittata with lots going on in the flavour department. Make it tonight.
