Last Sunday I made a huge pot of Chicken Soup, it was the gift that kept giving, feeding us for 3 nights on the run plus a few lunches. It was so lovely to be able to eat warm, soothing soup and to actually be cool enough to enjoy it. Finally the weather is cooler!
As the soup went a long, long way, there were a couple of meals planned that didn't get made so they will be carried over to this week. I had a few bits and pieces of fresh veg and such to use up, so it all went in Thursdays "Clean the Fridge Out, Beef Ragu" in went half a bag of spinach, some leftover mushrooms, tomatoes, some jarred chargrilled capsicum, a small chunk of feta, some kalamata olives (we buy a huge jar of these olives from Aldi, once a year) and some herbs from the freezer. It was divine!
I have ridden to work every day this week, partly because I really would like to complete this challenge but also because our daughter needs my car when she is down here working. I'm happy for her to take the car, as it literally makes me get on my bike and now it is cool enough to ride everyday too. We have had some showery rain come through every day but so far I have been able to get to work dry
I went over the bridge to Brighton last Saturday to pick up some bulk beef mince that we had ordered from our, new to us, Butcher, Jason's Quality Meats. We bought 5 kilo's of free range mince which cost us $74.75, it is more expensive but it is the price we are prepared to pay for meat that has come from an animal that has had a better life.
In total contradiction though, is the fact that we are okay with buying beef mince from Aldi, in a plastic container, for our dogs! That may well be the next area I tackle in regards to being kinder to the environment and making sure that the animal involved has had a better life. I'm nothing but a walking contradiction!
