I've been kind of wishing this month away as I am really looking forward to the Easter break, 4 glorious days off and then just two days later we have another public holiday for ANZAC day. It will be a most welcomed break as I am super tired at the moment.
I intend to stay at home, nothing new there hey! I'm looking forward to some quilting and gardening with a smattering of baking thrown in. To me that is the perfect long weekend, nowhere to be, no hassle with traffic or crowds, no stress, bring it on I say.
We never travel during school holidays as the roads are super silly and busy and we never holiday either while schools out, we would rather not be where everyone else is. When the kids were young we used to travel up to the family farm, about 2 1/2 hours away and spend Easter up there. It was really a beautiful time and we all have wonderful memories of spending time up there. We would take the back roads and stay off the highway to reduce stress.
The farm was owned by my late In-Laws and they worked hard to raise cattle for sale. I'm not too sure if they ever made a profit but they seemed to enjoy the hard work and spent a great deal of time up there. They were helped by my MIL's brother who really ran the whole farm, especially when they both became too unwell to be up there. We will be eternally grateful for the wonderful memories created for our kids by Grandparents that loved them.
Now on with the frugal things-
1. I had bought some fresh herbs for a few recipes, once I had used what I needed, I chopped and froze the herbs to prevent waste.
2. Fed the compost bin all the fruit and veg scraps plus a bin of shredded paper for the carbon content
3. Made the most of my precious weekend time by watching Gardening Australia on IView while I sewed a few more tiny houses. The quilt is coming along very slowly, unfortunately, I thought I had enough tiny houses made so that the final quilt would be about the same size as Milly's quilt (below), but I need to make another 40 tiny houses to make it big enough. I am going to try and have it finished for her for Easter.
4. Used up some left over whole cooked potatoes by chopping them up and frying them in butter and a splash of oil and a good grind of salt and pepper. Love your leftovers!
5. Made another fabulous dish using my home grown pumpkins. Love free food! I will be posting this recipe on Monday. It's an all in one pot, Pumpkin, Bacon and Pasta Bake.
