Zesty Chicken and Spinach Savoury Rolls

I love a good sausage roll, delicious mince meat wrapped in flaky pastry and they are always better when you make them at home. Yes, there is a bit of faff, but only a bit and they are so worth it. I found the idea for this recipe on another blog and as usual I have fiddled with the original recipe by upping the zesty lemon flavour. These little beauties are child friendly but meaty enough to satisfy the meat-a-sauruses in your family. I made them for dinner and served them with veggies but they would make a lovely addition to a lunch box as well.

I particularly love the addition of feta, it adds a wonderful texture and flavour to the bland chicken mince as does the spinach and lemony zest, there is a slight hum of heat from the chilli, but you can increase or omit completely if you wish.

Ingredients for Zesty Chicken and Spinach Savoury Rolls, clockwise from top left-
500 grams chicken mince, a good handful of baby spinach, 100 grams of danish feta, cubed, zest of one lemon, 1 spring onion, finely chopped, 1 teaspoon or more to taste of dried chilli and 1/2 cup fresh breadcrumbs, 

Add everything to a bowl

And, using your hands, mix thoroughly 

Flatten into a disk in the bowl and then divide into four, fairly equal, portions

Take out the frozen puff pastry just before needed. Cut each square of puff pastry in half and lay one portion of chicken mixture along the half, shape into a long sausage shape

Brush beaten egg along one side of the puff pastry

And roll up, pressing to seal

Continue with rest of mixture 

Brush with beaten egg and sprinkle over sesame seeds 

Then slice and separate on tray and bake at 200C for 35 to 40 minutes or until golden brown. As always, every oven is different so keep an eye on them.

Crispy and golden, delicious little mouthfuls
