Giant Chocolate Chip Cookie or Double Chocolate Chip Cookie

And hello Mel from Mel's Kitchen Cafe, thank you for another amazing idea! These giant cookies/biscuits are just wonderful, really delicious and so easy to make. There is no faffing about, rolling little balls of dough, just mix your dough and press it out into a 9" circle, pop it in the oven and you're all set to be a superstar in your kitchen.

I made these last weekend, leaving the chocolate chip one at home and taking the double choc version to work on Monday. They are both heavenly, both easy to make but I feel the double choc version has won me over. It does have a slightly softer texture and of course more chocolate is always a good thing.

I cut the choc chip one into 12 portions but as the double choc one is richer I cut it into 16 even triangles of bliss. As always, I have fiddled with the original recipe to make it my own.

Make it today.

Ingredients for Giant Chocolate Chip Cookie, clockwise from bottom right-
115 grams of butter, melted, 1 egg, 1/2 cup each of white and brown sugar, 1/2 cup dark chocolate chips, plus a little extra for sprinkling over the top, 1 1/2 cups of plain flour, 1/2 teaspoon of vanilla essence, 1/4 teaspoon salt and 1/2 teaspoon baking powder. For the double chocolate chip version you reduce the plain flour to 1 cup and use 1/4 cup of cocoa powder, everything else is the same. 

In a large bowl, add the sugars, salt and baking powder

Whisk together making sure there are no lumps

Now add the melted butter, egg and vanilla essence

Whisk till smooth 

If you want to make the double chocolate chip variety, this is where you add 1/4 cup of cocoa powder  

Now add the flour and chocolate chips, remember to reduce the flour to 1 cup if making the double choc chip variety

Mix well

On a lined oven tray, press the dough out into a 9 inch circle, 

And sprinkle over some extra chocolate chips, pressing them gently into the soft dough

Bake in a preheat 180 C oven for 13 to 15 minutes or until just cooked. Do not over bake you still want the cookie to be soft and squidgy

Let the giant cookie cool completely before cutting 

The Double Chocolate Chip variety is a little softer so be extra careful with it

The cookie should be firm on the outside with a soft belly, so keep an eye on the cookie while baking, as always every oven is different and you don't want to over cook these babies.
