Creamy Herb and Garlic Dip

Hello Dear Reader,


Just a quick little post this morning. I had some wholemeal flatbreads that needed using up, so I went ahead and cut them into little triangles (well, kind of triangles) and oven baked them with a little spray of rice bran oil and a good grind of salt.

So then I needed something to dip the crunchy little triangles into, so that is how I this little recipe was born. All I needed to buy, as a starting point, was a pack of cream cheese, the rest I had at home already, so frugal wise I was very happy. Thank goodness for the few herbs I grow.

I made mine in my Thermomix but this simple dip could be made in a food processor or indeed, by hand.

Ingredients for Creamy Yoghurt and Herb Dip, clockwise from top left-1 x 250 gram pack of cream cheese, 2 tablespoons natural yogurt, 1 spring onion, a good handful of parsley, 1 garlic clove and a small handful of mint.

In the TM bowl, add all ingredients 

Blitz for 3 seconds on speed 8 then give everything a really good scrap down

Then blitz again for 20 seconds on speed 4

Spoon into a serving bowl and serve with cracker of choice

If you can, let the dip sit in the fridge for a couple of hours to let the flavours mingle, it is a super easy and very delicious dip.
