Orecchiette with Sausage and Broccoli

We bought some really good quality sausages a while ago from Jason's Quality Meats at Brighton and have been thoroughly enjoying them. We bought six different varieties and all have been delicious. I've always wanted to make a dish where you use the meat out of sausages, just like Jamie Oliver does in quite a few of his recipes. I believe they have to be a good quality sausage to begin with otherwise the texture will be not quite right.

So last week, with the second to last packet of six sausages, I made this really delicious and super easy dinner. There aren't too many ingredients and it makes quite the pan full, perfect for the whole family. I used a spicy pork sausage for this one but I think any good quality pork, beef or even chicken sausage would work

Ingredients for Orecchiette with Sausage and Broccoli, clockwise from left-6 x good quality sausages (about 750 grams) 250 grams of orecchiette pasta or any other small pasta you like, a splash of oil, 1 cup chicken stock (I use Massel stock powder) 1 head of broccoli cut into small florets (about 350 grams) 1/2 cup grated parmesan cheese, 30 grams of butter, 3 cloves of garlic, grated on a microplane, 1/4 teaspoon or more to taste of chilli flakes, 1/4 teaspoon of salt and a good handful of parsley, roughly chopped

Firstly cook pasta in the usual way and set aside till needed. Remove casings from sausages, crumble the sausage meat into a medium hot pan with a splash of oil, sauté while breaking up sausage meat with a wooden spoon, when almost cooked through add the grated garlic and continue to cook till fragrant and sausage is golden 

Now add the broccoli, chicken stock, chilli flakes and salt, pop a lid on and steam broccoli for a couple of minutes 

Remove lid and add butter to pan, letting it melt into the sauce

Add the cooked pasta and 1/2 the parmesan cheese

Giving everything a gentle but thorough mix to coat everything in the buttery sauce

Finish the dish with a liberal sprinkle of roughly chopped parsley and the rest of the parmesan cheese

Soft, comforting and so delicious, this is a great weeknight, complete meal in a pan, that can be on the table in under 45 minutes. What's not to love?
