Before we left for our little 4 night cruise getaway I did a lot of frugal stuff, mainly to do with food, so as not to waste a thing. We did a very small shop on the Saturday before we left, of course we wouldn’t be home to use anything but we did have our Son and his lovely Partner over for dinner on Sunday night, so we needed a few things for then.
I picked two beaut little pineapples from our garden and as I wanted to use them before we left I made the menu around them. I made Ginger and Pineapple Chicken plus Caramelised Pineapple for dessert. The recipe for the caramelised pineapple called for Malibu, which I didn’t have in the house, so I used a good swig of my home made vanilla essence and called it good, it was just a simple butter and brown sugar caramel with the vanilla essence added just before throwing in the pineapple pieces, boy was it fabulous.
To grow a pineapple you simply "screw in" the spiky top of a pineapple you have eaten, leave the top to "harden off" for a week or two, before screwing it into the soil (I grow mine in pots) and 18 months later you have a pineapple. Mother Nature is amazing!

We got home this morning about 8am and while it was lovely to be away, there is no place like home, over the weekend we will be unpacking, washing and generally gettting things ready for the coming week. We will menu plan and shop from there.
I have one more lovely outing to finish off my little holiday, on Sunday afternoon my darling sister and I will be going to see Nigella at the Queensland Performing Arts Centre, as you probably know already I love this beautiful lady and will so enjoy this experience with my sister, who is also a foodie at heart.
Now on with the frugal things-
1. Blitzed up this Banana Pancake batter, using 3 slightly squishy bananas, I then froze the mixture for when I have the time to cook these, light as air, pancakes.
2. Made brown sugar in the Thermomix, it takes 20 seconds to make, literally, and the cost is minimal (I will do a calculation soon for this)
3. Wrapped the few veggies, left over from last week, in foil to preserve them until we came home, I had one cucumber, 1/2 an avocado and a few lettuce leaves left over from last week. I try not to waste a thing. I've just checked on them and they are still in perfect condition, we will use them up today for some lunch time salad wraps.
5. Bought our water bottles with us to save buying bottled water on the boat. Bottled water was, as expected, ridiculously expensive on board the boat and for obvious reasons, environmental and cost wise, I will never buy bottled water.

4. Sliced and froze the remains of a lemon I had cut a few days prior, before we left. I will pop a slice into water for a refreshing drink.

We filled our own water bottles every day from "The Pantry" water and ice machine. There is a sign stating NOT to refill your water bottle but everyone was doing it and the staff never said a word. We're rebels like that!
