I am beginning to think that this summer will never end, the heat is so extreme and I am really starting to fear for our future. Our planet is getting hotter and colder, the rain either comes in floods or not at all, the polar bears are starving and just weaned cattle are drowning in the barren paddocks. During some sleepless nights recently, these thoughts and images have been popping into my mind and it is very distressing to say the least.
I said to lovely hubby on Tuesday night after I had finished watering the gardens, what are we doing? Building garden beds to try and be more sustainable by growing our own fruit and veg, trying to keep a few plants alive using our precious water, I will never garden again in our summer, it is just too difficult.
My tiny efforts to be kinder to the planet probably won't make one speck of difference to the final outcome, there is just too much damage done. I will keep going though as the thought of being an unconscious consumer doesn't sit well with me.
We don't have a planet B!
Sorry to be a sad sack, I think I'll just stop watching the news! Now on with the frugal stuff-
1. Made some dog treats out of some not so wonderful peanut butter I had bought a while ago from the Golden Circle Factory Outlet. The flavour of the peanut butter itself was okay but it had added buckwheat and chia seeds so the texture was a bit weird. In the Thermomix went 1 cup of peanut butter, 1 cup of oat flour, 1 teaspoon molasses, 1/4 cup of wholemeal flour and 1/2 cup cocoquench milk. It made a lovely soft dough, I then rolled slightly larger than marble sized balls, popped them on a lined tray and flattened them with my fingers. Baked them for 15 minutes and viola, soft, healthy dog treats that the little woofs love. They both have had some teeth extracted so soft treats are better for them and of course there is no waste!
2. Cut up the bunch of coriander I had bought to use in a recipe that just didn't happen this week, I finely chopped the top leafy part and froze it and with the roots I used a sharp knife to "peel" away the hard skin and then finely chopped the roots also, freezing them in a little container to add to Thai style curries at a later date. I lost my Mexican coriander which is a perennial plant, I will have to order another plant from here, as I've not seen it for sale anywhere else.
3. Made 2 loaves of free form, light rye bread.
4. Cleaned the labels off some glass jars using eucalyptus oil and then ran them through the dishwasher, I kind of have a thing for glass jars! I can't seem to put them in the recycling bin!
5. Had a meal of prawns that Lovely Hubby had caught, the prawns are still prolific in our waters and they caught their bag limit again last Sunday, we now have many feeds of prawns in the freezer.
