Well, that week went fast, quick as a wink, in fact! I have had very busy days to say the least, putting in at least 6 hours next door before coming home to tackle my house work and dinner. Our house has been a little quieter this week though, as our son and partner are away for a weeks holiday in New Zealand. It's actually been lovely just to have the two of us here in quiet solitude after both putting in big days.
The one constant is the need to eat, my tummy always tells me when its lunch time so I've been taking a 30 minute break then and I try and finish up next door by 4pm so I can walk the little dogs and start on dinner. Our meals have been very simple and easy to pull together which was a blessing. I only tried one new recipe this week which was a vegetable side dish, it was easy and quite delicious, I have plans on posting the recipe soon.

Saturday-Honey Prawns, steamed Basmati Rice and Choy Sum with oyster sauce
Sunday-Slow Cooked BBQ Beef Brisket with Mexican Potatoes and steamed Broccolini
Monday-BBQ Spatchcocked Chicken (cooked on Sunday while the BBQ was still hot) with Green Bean, Tomato, Feta and Bacon Salad (recipe coming soon) and Squashed Roast Potatoes
Tuesday-Left over BBQ Beef Brisket with more of the same sides as last night. All I had to do was roast some more Squashed Potatoes and dinner was done, thank heavens for leftovers
Wednesday-Pan Fried Venus Tusk Fish with Creamy Dill Potato Salad
Thursday-BLTA's, that's Bacon, Lettuce, Tomato and Avocado on toasted Turkish Bread
So we were fed all week without too much effort on my behalf, we ate dinner very early every night and I was blowing zzz's by 8! However, even though I was getting into bed early I didn't sleep well, my mind is simply in overdrive at the moment, I just need to keep going, to get it all done. At least you can see I am feeding my body, it's my mind I'm worried about!
